Recipe Summary Italian Shrimp And Scallop Risotto
The secret to making a good seafood risotto is to use a high-quality fish stock and of course the freshest seafood you can find. Cook the shellfish and rice separately, as the rice needs more time. If you cook them together, the shellfish will overcook and get chewy.Ingredients | Shellfish Cooking Methods3 tablespoons olive oil3 cloves garlic, peeled½ pound shelled sea scallops½ pound uncooked medium shrimp, peeled and deveinedsalt and ground black pepper to taste1 pinch red pepper flakes½ cup dry white wine½ lemon, juiced1 bunch fresh parsley, finely chopped1 quart fish stock, or more as needed2 tablespoons butter1 tablespoon olive oil1 shallot, finely chopped1 (12 ounce) package Arborio rice½ cup dry white wine1 tablespoon extra-virgin olive oilDirectionsHeat 3 tablespoons olive oil in a skillet over a medium heat.
